What’s in a name? Quite a bite. Everybody with platinum plastic savors the beef specialties at Arnie Morton’s Restaurants so I was intrigued to find a showcase of Morton’s (of Omaha) Steakhouse Classic Tri Tip Beef Bottom Sirloin at Costco. Pre-seasoned and tenderized in a sealed ready-to-cook pack at a mere $4.99 per pound, the promising roast package has a lot of very small print listing over a dozen mostly-dried flavorings and up to 12% of water. After 50 minutes in the 425 degree oven the browned and well-done roast emerged. Alas, the over-seasoned, very spicy results did not rival any beef dish served at the award-winning restaurants—maybe the resemblance is only name-deep—nor could the packaged roast begin to compare with my own slow-roasted, far less complicated home recipe (real onions, chopped garlic, light salt and coarse pepper, a generous pinch of oregano and parsley with a cup of beef broth plus a shot or two of red wine and a slug of Worcestershire sauce) roasted for hours in the slow-cooker. Fair warning: Don’t take the lid off for a peak or you must add an extra hour of cooking time.
A word to the wise. If you’re yearning for Morton’s quality beef at lunch or dinner, don’t make compromises. Make reservations!
